Butter Chicken cooked in Slow Cooker

Chicken breast cooked in sauce in the slow cooker. 

Suitable for: Gluten-free

Prep Time: 20 mins – Cooking Time Up to 3 to 4 hours 

Serves: 4-6 people

Ingredients:

1 chopped onion
100g tomato puree (half tube)
1 tin coconut milk
4 crushed garlics
1 tablespoon garam masala
1 teaspoon cumin powder
1 teaspoon coriander powder
1 teaspoon chilli powder
1 teaspoon crushed peppercorns or to taste
1 teaspoon salt or to taste
4 heaped tablespoon natural yoghurt
125g salted butter
2 large chicken breasts cut into cubes
Fresh coriander or mint leaves for garnish

Method:

  1. Set slow cooker to High
  2. Add coconut milk, coconut cream and yoghurt to the slow cooker  
  3. Add all the spices and mix
  4. Add butter and chicken
  5. Place lid on the slow cooker and cook for 4 hours mixing occasionally 
  6. Garnish with coriander and serve with steamed basmati rice
