CHANAY KA PILAU
(Pilau Rice with Chick Peas)

Easy and spicy rice dish that you can serve with a curry of your choice or just yogurt and some salad. So tasty that it can be eaten on its own as well. The thing to remember if you have one cup rice the water is going to be double (1 Cup: 2 Cups).

The rice for this dish is basmati. If you want less spicy rice reduce the cayenne pepper.

Prep: 10 mins, Cooks In: 25 mins
Serves: 4-6 people
Ingredients:
1 big sliced onion
2 cups rice
4 cups water
2 tsp salt or to taste
½ tsp coriander powder
½ tsp cumin powder
¾ tsp cayenne pepper
2 tbsp oil (I use sunflower)
2 black cardamons
2-3 cloves
2-3 black peppercorn
1 inch cinnamon stick
400g tinned chick peas (washed)

Method:

Wash and soak rice for 15 to 20 minutes

Heat oil in saucepan , add sliced onion and fry until dark brown, leave to cool

Add all the ingredients except for the rice and water with the onions and mix

Once mixed add water and increase the heat so that the water is boiling

The onions will float on top these can be removed at this stage if required

Add rice to the boiling water and cook on medium to high heat until water evaporates and the rice is nearly cooked

Cover the pan and reduce the heat to low to medium and leave for 15 minutes ensuring no steam escapes whilst the rice cooks evenly and is soft

Serve with curry, salad, raita or plain yogurt
